The "Waterford blaa" is now a protected term

The European Commission has added the floury bap to a list of regionally protected products.

MANUFACTURERS OF BLAAS will only be allowed use the term if it is baked in Waterford from now on.

The European Commission has awarded the terms “Waterford Blaa” and “Blaa” a Protected Designation of Origin (PDO).

The campaign to have the floury baps, so synonymous with the county that its GAA teams are named for it, to be protected has gone on for nearly two years.

Blaas are baked with flour going on before baking, differentiating it from a bap.

It joins Clare Island Salmon, Irish Salmon, Connemara Hill lamb, Timoleague Brown Pudding Pudding and Imokilly Regato on the Database of Origin and Registration, the European database of protected produce.

Around 12,000 blaas are baked in Waterford daily, with most sold by the end of lunch.

The blaa dates back to the 17th century and is believed to have derived its name from blanc, the French for white, due to the flour on top.

    A great day for the Deise. The City Council should give a free blaa to every visitor to Winterval to celebrate. It’d be a marketing triumph because once you’ve had a nice warm fresh blaa you’ll want one for your breakfast every day.

    It’s good to see and I think more Irish products need to start going this route and protecting their brand properly.
    We have some great food products but we aren’t really doing enough to use branding and product differentiation to stand out and push up the margins on exports.

    I was reading some stats on this recently and a huge % of Irish food exports are generic product like “irish beef”, “irish salmon”, “milk” etc. There’s a lot more could be done (not just by Govt but by individual companies and producers too) to really push some proper brand development!

    Other big food producing countries like France and even the UK seem to have a lot more branded-up products being exported.
    I think Ireland’s food industry future is in high value, high quality exports with really recognisable brands rather than bulk exports where we’re trying to compete on price rather than quality. There’s still a long way to go to really drive that forward!

    @David – they have to be genuine though, the Italians etc have hundreds of years of heritage behind their Parma ham Parmesan cheese etc. Irish food has a good reputation on the continent just not at any price. I wouldnt bet on a bunch of marketing wonks getting very far and “fooling” the German or French public.

    Ah the blaa, good without absolutely everything. Butter, chips (from Cunninhams / Dooleys only please) black pudding, White pudding, Rashers, Sausages, Ham Cheese and pickle, ham and cheese, ham and cabbage, easy singles, roast ham, bolied ham, luncheon meat, cooked liver, beef steak, noodles, hunky dories, barbecue crisps, meanies, taytos, sausage rolls, digestive biscuits. Can be served on any occasion including weddings and funerals……On its own or as part of a bigger meal. Can also be eaten stale after a night out.

    Anybody coming my way in the next couple of days please bring a bakers dozen from ballybricken. Its only 15 hours on a flight. Only thing I miss really about Waterford city…that and pints in Geoffs and T&H Dollens

    @Ann Marie, the raw dough after being shaped is dusted with flour before being baked, usually bread rolls are dusted after baking.

    Making bread a month back the yeast ran amok and I ended up with a tray of Blaas, they were definitely Blaas as I saw them in the wild a few times. Question is, will they come after me for royalties?

    Kilmacow is less than a mile from Waterford City Centre. No different really from the bakery being in Lisduggan or Ardkeen.

    Let’s get one thing straight. The Blaa is a strictly Waterford city phenomenon. Even in Dungarvan they’re not THAT popular, considered something that folks eat ‘Down Waterford’
