6 of the best.... hearty homemade chillis for a satisfying winter dinner

Perfect for chilli-er weather.

CHILLI IS A DELICIOUS meal to enjoy all year, but now that the weather is a bit colder, it tastes even more satisfying.

The origin of chilli is often disputed. It’s the official dish of Texas, a fact which supports the belief that the dish originated there – rather than in Mexico. As for the spelling, you’ll see ‘chili’ most commonly in the US, but over here it gets an extra ‘L’ for good measure.

While most chilli recipes are made from beef, tomatoes, hot peppers and beans, the traditional Texan variety, or, “bowl o’red”, as it’s known there, is actually made without any beans at all (chilli sin carne).

There are numerous variations of this hearty recipe. Chilli verde is made from pork and spices like cumin and oregano, while “white” chilli is made using chicken and cream.

Regardless of their flavour and meat combinations, one thing in common with all chilli recipes is that they tend to be intensely satisfying! Read on a for a few of my favourite recipes from ireland and abroad…

1. Vegan chilli con carne by the Wonky Spatula: It’s all about the texture in this hearty vegan chilli. Blitzed walnuts are simmered in the rich tomato sauce to add a delicious, nutty flavour, and a protein boost. Top with sliced avocado and spring onions for the perfect finish.

2. Beef chilli nachos by French Foodie in Dublin: Chilli nachos topped with an abundance of fresh flavours like tomatoes, spring onions and homemade guacamole? This recipe is what your Friday nights have been waiting for.

3. Slow cooker beef chilli by Wedges and Delights: An intensely flavoured classic chilli like this one is perfect for family get-togethers. Serve with rice, or spooned over a baked potato, with a dollop of sour cream.

4. Turkey chilli by Roz Purcell/Natural Born Feeder: This turkey chilli is packed full of spices and antioxidant packed turmeric – Roz calls it a “flu fighting chilli”. This version is served with spiralised courgette, making this a low carb, protein packed meal.

5. Easy Three Bean Chilli by The Wandering Matilda: This simple yet filling bean recipe would be a great one to batch cook and freeze for later. Want to add some chorizo or cubed sweet potato? Do it. Food blogger Wandering Matilda encourages using this recipe as a base and adding in whatever you want to use up.

6. Chicken and Chorizo Chilli by Skinny Kitchen Secrets: This is a lighter take on the classic chilli that uses chicken breast instead of minced beef. Don’t fear though, this is still packed with flavour and spices to ensure an ultra tasty meal.
